Black Bean and Corn Quesadillas

My friend, Robin Burks, tweeted about having Black Bean and Corn Quesadillas for dinner and I asked for a link for the recipe. It had a simple list of ingredients and seemed quick to make but the night I got the recipe it was late and I decided to go with something I’d made before.

Anyway, last night I finally made the quesadillas and they came out wonderfully! The most time consuming part was really chopping the onion… So definitely try this if you want something easy peasy and good. Below I have a few progress pictures from my cooking session (taken on my phone, so please forgive the quality):

Slow Cooking: Chicken Chili Tacos

I love crockpots! I mean, what’s not to love about throwing a bunch of stuff into a pot, then coming back a few hours later and having something yummy to eat?

While I was searching for slow cooker recipes on Google, I came across a link for Slow Cooker Chicken Chili Tacos at Martha Stewart. The pic looked good, so I decided to try it…

Scrumptious! The chicken thighs came out super tender with a wonderfully spicy, smoky flavor. These tacos were criminally good. Like whoever came up with this at MSL should be arrested for an excess of talent! Anyway, below are my pics… please forgive the quality, I used my camera phone – the only camera I’ve got. 🙂
